Winding through New Zealand’s South Island, this emerald-green river has always been a gold mine of sorts. People literally panned for gold here in the 1860s; today, tourism brings in the big bucks. Outdoor travel outfitters run a slew of white-water rafting and other adventure expeditions through the 46-mile (and aptly named) Shotover’s many rapids.
