History: Since 2010 the Noble Pig has been feeding Austin -- the fastest-growing city in the US -- a mouthwatering lineup of gourmet sandwiches baked in-house and topped with homemade condiments. The Noble Pig has a cozy, welcoming interior, dark wood benches and a simple, clean-cut décor. The sandwiches arrive one-by-one on cafeteria-like trays covered with brown wax paper, accompanied by fresh pickles and ruffled chips.

Recipe:
Ingredients
Bread
Oil
Salt
Pepper
4 oz. of beef tongue
Garlic aioli
Red pepper relish
Smoked green onions

Directions
Slice freshly-baked bread in thick slices and toast it Texas Toast-style (with oil, salt and pepper). Then, salt and pepper the beef tongue, oil the griddle and sear the beef tongue (caramelize it on each side). Next, spread the garlic aioli on the bottom piece of toast, put the seared the beef tongue on the bread, top it with red pepper relish, add smoked green onions, and top the sandwich with the second piece of bread.
